Question: Is it odorless?
Answer: When you open the package, you will smell the balsamic and strong smell of black garlic, but you can consume as much black garlic as you want because it does not cause odor on the body. Question: Why does white garlic smell but black garlic does not?
Answer: The smell you get from fresh garlic that makes you say "That's garlic" comes from a molecule called allicin, which is created by the garlic plant for the sole purpose of making you cry. It is part of garlic's defense system against herbivorous predators. When you cut (or bite) a garlic clove, tiny molecular bags inside the garlic cells rupture, and an enzyme called alliinase meets the alliin (odorless) molecules and breaks them apart, causing the volatile, tearing (“tears”) of the allicin molecules.
This does not occur with black garlic because the heat applied during turning it black thermally inactivates the alliinase enzyme. For this reason, black garlic does not smell.
